Im confused about the number of side dishes offered.For a 5/4 Is it 1 or 2 per 5 entrees,or is it 1 or 2 different side dishes per 5 entrees? For example: If the client picks a beef dish is it carrots and potatoes,then for their fish entree is it 2 different ones.Do they spread the (1 or 2) sides throughout the 5 entrees? Thanks a lot.

Side dishes are meant to compliment the entree. Some chefs offer 1 side dish, others 2 - depends on the service usually. Nonetheless the side dish is different for each entree. Who would really want carrots and potatoes with all 5 entrees?

So for example, here's what I cooked recently for a 5x6 with ONE side dish for each entree:

Braised Chicken Breasts served with Sauteed Garlic Spinach
Shrimp with Feta and Tomatoes served with pasta
Florentine Orange Roughy served with a medley of peppers and squash
Garlic Ginger Chicken served with brown rice
Pesto Salmon served with roasted asparagus
