Greetings All!

I've been lurking in the shadows, reading posts and have been given the privilege to post.

What do you do when you cook a pasta dish? I've never heard of freezing noodles (other than lasagne). Do you give your client directions for cooking the noodles & then have them pour the sauce you've prepared on top?

Also, I've never frozen cooked fish before. How does one do this? Partially cook the fish & then cool & freeze?

I will give you my info on another post. Currently, I'm working on my business plan so, needless to say, that is keeping me very busy.

Hi Kathy...pasta can be frozen. All frozen foods should be thawed in fridge overnight to avoid spoilage etc. You can heat pasta by simply "refreshing" it in boiling water for a minute or so. Or you can even cover it with a damp paper towel & microwave for a few minutes at 70% power (towel will act as a steamer)

For fish, there is no one right way. Some chefs will partially cook, allowing their client to "finish" it off, others will cook fish thoroughly, flash freeze it then seal it in a vacuume bag (client heats the bag in boiling water, thus not chancing overcooking the fish), and some chefs will label it RAW, and have the client bake it or sear it.

Glad to hear you are working on your business plan. You may want to consider joining APPCA as it will help you from re-inventing the wheel and you will have great training materials to rely on. Not only that, but the member support here on the forums is outstanding.
