I have been asked to make a lunch for about 6 - 8 people this Sunday. I will be goingto the clients house to cook it. She wants a pasta with chicken and a salad and dessert.

Does anyone have any pasta ideas? I was thinking of making a penne with roasted veggies and grilled chicken with a sauce thats made of marinara sauce, asiago chess, mozzarella cheese and topped with fresh parmesan cheese. Its a casserole that I make at home that I like alot.
But I am open to just about any idea.

Does the client want

"pasta with chicken"

or

"pasta AND chicken"?

Sorry...She wants the chicken in the pasta dish so pasta with Chicken.

Chicken Tetrazzini?

Chicken Florentine Lasagna? Alfredo or bechamel sauce, cheese, chicken, spinach. Yum.

I also do a killer Chicken and Spinach Cannelloni with Roasted Red Bell Pepper Sauce.

Are you an APPCA member? I'd be happy to post in the Recipes for Success forum, otherwise, you could probably find similar items on the internet.
