I am assuming you mean in a sauce, correct? Not just stocking up on sour cream and freezing it? I usually let the client stir sour cream into a sauce on their own, off heat, and at the end of heating. It tends to separate out if it's frozen, although stablizing your sauces with rice flour can prevent that.

Yeah in a sauce...got a kind of pork stroganoff that I want to do and wasn't sure about the sour cream. Thanks.

June...I have used sour cream in a few different sauces without "breakage" & no "stablizers" in it. It will depend on what you are making. You might want to go to the once a month cooking site...there's a recipe called Freezable Beef Stroganoff & it's good...

I don't know if the the one I am referring to, is still there..found it 4 years ago. That being said, there was nothing speical about this recipe. I mean it was simply your basic stroganoff, & it just so happens to freeze fine.

No, it doesn't seem to be there anymore...did come across a tasty sounding 'pulled pork' recipe for the crockpot tho,lol.
I didn't add the sour cream this time but I'm going to test it at home and see how it comes out. Thanks for the input
