Hello Everyone. I have been lurking for awhile soaking up all the information everyone has contributed in this free forum. I will be joining sometime in the next thirty days. my question is do most clients want more sophisticated meals like Foie gras or do the prefer meals that they are more familiar with like mac n cheese or Lasagne? thanks~ Jim
90% of my clients want traditional foods. 10% want more unique choices, much of it being high end seafood. I have never had a request for foie gras, yet know another chef that serves it monthly to a client.
Much depends on the client and this business is all about "personal." Some will use your service as a substitute for eating out, so will want more high-end, unique things. Not exactly foie gras--but sea bass, gorgonzola-crusted beef tenderloin, etc. Some will want more "homey" things but things they would never do themselves--osso buco, short ribs, stews, lasagna, etc. It really runs the gamut, however, feel free to specialize and do what you're comfortable with.
Chefs Karen and Carol are right on the money. In our case, we also specialize in personal service. Some of our clients are not able to cook anymore but still want all the foods that they used to prepare and that could be traditional or with one of our clients they have traveled the world and have palets that are so much fun to cook for.
Then again, we have a client that wants the SAME thing every week. No matter how hard we try to change the menu, the response is always the same, we are boring and like what we like. I always tell them, you are paying us for what you want and you are not boring.
