Like Cara I am considering quiting my job to start my own business; however I have to wait until I know it is going to work before I can quit my job. I have started taking cooking classes that will compliment what I already know... all self taught but constantly receive compliments from anyone and everyone who has tasted the food I cook.
Anyway, how long do you think it will take me to transition. I am setting up a home office, doing a lot of research, reading lots of books right now.
I left my full time job in February and signed up with a temp company to fill the gaps as I started taking cheffing jobs. I stopped the temping in October when I had several chef jobs a week. It was about a year and a half before I had a solid, five day a week cooking schedule. Everyone's results vary of course, good luck to you!
Indy - I'm in transition right now. Started with my training materials, etc in March, 2003. I still have my full time day job with a very flexible boss and schedule so I just take days off as needed to either cook or focus on marketing, etc. There are pros and cons of course - all that time I'm at the day job could be spent marketing full time which would probably get the business going faster. However I do like the consistent paycheck while I am working on the business. So you'll have to decide what works best for you in your situation. My goal is to be able to cook three days a week by March. That would replace my current day job salary so at that point I would probably just quit (or only stick around for special projects).
