Hello, everyone!! I haven't been on the forum in a while. I have had a lot going on with me. It's good to be back. Anyway, I have had a request come in from one of my clients. She wants me to preapre 9 entrees for her. Has anyone out there ever done this many in one day?? If so, please provide some advice! She just e-amiled me with this request tonight, so I haven't responded back to her yet. I wanted to be able to think this through and get some feedback from you guys. Thanks for any input!

None of our clients have ever had more than 5 entrees in one day.

It would seem to me that if you are charging on a flat fee per entree basis you would be fine ($60 x 9 = $540), however if you are fee plus, I would have a max of 5 entrees per cooking day.
